One of the highlights of our meetings is, without a doubt, FOOD. We’ve never organised anyone to bring food, but without fail, we have an amazing repast. One of the stars of our March Meeting was Sheila’s Raw Cheesecake. Here’s the recipe. YUM.
Base
1cup almonds
1 cup walnuts
1/2 cup coconut
1/2 cup dates or raisins
1/2 tsp salt
Whizz in processor until breadcrumb consistency. Press into base of spring form cake tin.
Topping
3 cups raw cashews soaked for about 2 hours
1/2 cup agave
1/2 cup coconut oil
1/2 tsp vanilla essence
1/2 cup lemon juice
About a cup of raspberries
1/2 tsp salt
Drain cashews and place with all ingredients into a food processor and whiz until smooth. Pour on top of base and cool in fridge for about an hour.
